I love using fresh fruit as a dessert and here’s one that popped into my head.

Baked banana with lychees

Banana

Lychees (tinned is fine but I’ve yet to see them in Andalucía)

Grated fresh ginger
Runny honey

Split banana in two and place into a baking dish surround by lychees

Drizzle with some juice of the tinned lychees

Sprinkle with ginger

Drizzle with honey

Bake in a hot oven for 20 minutes or so

Serve with crème fraîche.
