Fried Potatoes, Peppers & Leeks

This serves one or two as a side dish.

1 potato, sliced
Olive oil
2 small peppers, red, green, yellow or orange, sliced
1 small leeks, sliced
2 garlic cloves, sliced
Large pinch red chilli flakes
Pinch sea salt
Grind of black pepper
Parsley

Add oil to a pan over medium heat, when the oil is shimmering add the peppers and leek.

Meanwhile, boil the potatoes for 5 minutes, drain then allow to dry.

When peppers and leek are soft add the garlic and potatoes, giving everything a good shake.

Continue to cook until the potatoes start to colour.

Add the chilli flakes, salt and pepper. Shake the pan and turn off the heat. Let things rest whilst you pour yourself another glass of wine.

Sprinkle with parsley before serving.
