I’ve made this before and it is probably my favourite. I play around with the mustard seed ratio but this one is 50/50.

135g yellow mustard seeds
135g black mustard seeds
250ml lager or beer
135ml apple cider vinegar
Pinch crushed chilli flakes
1 tablespoon runny honey
1 teaspoon ground nutmeg
1 teaspoon sea salt

In a bowl add the mustard seeds then pour over the lager or beer. Cover and refrigerate overnight.

Next day add the rest of the ingredients then whiz in a blender until nearly smooth.

Spoon into sterilised cold jars. Store for a few days before using.
