This is so simple and beats anything you can buy in a jar at the supermarket. Make a large batch which you can use to transform any meal including a cheese sandwich.

All you need is a quantity of tomatoes, garlic, herbs, sugar and oil.

Preheat your oven to maximum.
Cut the tomatoes in half and place in a mixing bowl then add olive oil, finely chopped garlic, pinch sea salt, grind of black pepper, dried herbs (thyme and oregano), and pinch of sugar. Mix thoroughly.
Place tomatoes cut side up on a baking sheet and place in the oven immediately turning the heat down to 75-100°C and leave undisturbed for 2 to 3 hours.
The slower they cook the sweeter they become but make sure they do not char too much.
They are ready when they’re soft and fragrant.

These do not usually last very long in my casa but if you want to store them then add to an airtight jar and cover with olive oil. They should keep for a while in the fridge.

Sunblushed tomatoes
