A light lunch or simple supper.

Add a drained and rinsed jar or tin of beans of choice to a large bowl
Add finely chopped carrot, tomato, garlic, red chilli and red or spring onion
Add a squidge of sun dried tomato paste and a glug of extra virgin olive oil
Stir gently
Add feta or soft goat’s cheese
Add finely chopped fresh herbs, parsley, mint, oregano, basil and thyme, etc.
Add a little fresh lemon juice and a splash of cider apple wine vinegar
Season with freshly ground black pepper
Stir gently again…

It’s ready… and no cooking.
