Got some fish that needs using up? Cod, salmon, hake or prawns in the depths of the freezer…
This is a quick and easy fish pie that has copious amounts of vegetables too.
Boil potato and sweet potato together with a garlic clove and a big pinch turmeric for the mash topping. When mashing add butter and white pepper.
Meanwhile, grate:
One tomato
One onion, peeled
One carrot, peeled
One garlic clove, peeled
½ red pepper
1 fresh green chilli
½” fresh ginger
To this mixture add:
White pepper
Pinch cayenne pepper
Squeeze lemon juice
Ripped basil leaves
Stir and mix everything.
Drizzle a little olive oil in an oven proof dish and place the fish of choice inside then the mixture over and sprinkle with frozen peas or green beans. The grated vegetables and lemon juice will keep the fish moist.
Top off with the mash and bake in the oven at 200°C | fan 180°C for 35 minutes or until golden brown on top.
The vegetables are not restricted to the above it is just what I had. Usually I top my pie off with grated Parmesan cheese but alas there was none in my fridge.
