Thinly slice a red onion(s).
You will need ½ teaspoon of brown sugar, ½ teaspoon salt and 200 ml apple cider vinegar per onion. Flavour with a clove of garlic, split in two, a couple of dried red chillies, a bay leaf and some black peppercorns.
First pour boiling water over the onions and let them drain.
Put the sugar and salt into a glass jar then add the flavourings and vinegar allowing the sugar to dissolve.
Add the onions, seal the jar and place in the fridge. They will be ready to devour the next day and will last for several weeks.
