Cherry Tomatoes

In a bowl mix a tablespoon of olive oil with one teaspoon brown sugar, 3 garlic cloves, crushed and roughly chopped and a tablespoon of balsamic vinegar.

Place 300g cherry tomatoes in a baking dish together with a quartered red onion and a few slices of red pepper. Drizzle with the mix and throw in a couple of bay leaves and bake at around 160°C for one hour.

Easy peasy and delicious served over baked cod, stirred through pasta or spread on crusty bread.
