Make a paste by combining the following in a blitzer.
5 garlic cloves, peeled
5 dried Kashmiri chillies
2 tablespoons apple cider vinegar
1 teaspoon turmeric powder
12 black peppercorns
1″ piece fresh ginger
1 tablespoon tamarind
1 teaspoon cumin, ground
1 teaspoon brown sugar
Lemon juice, squeeze
Sea salt, big pinch
Marinate the steak in lemon juice and salt for 10 minutes.
Cover both sides of the fish with the paste, you may wish to use latex gloves if using your fingers.
Shallow fry in vegetable oil until done to your preference. Top with fried onions and fresh coriander.
