Fish pie is often seen as a heavy, indulgent winter classic, usually swimming in double cream and topped with a mountain of buttered mash. But it doesn't have to be that way. This no-cream fish pie is a staple in my kitchen because it relies on the natural flavours of the fish and a clever "all-in-one" approach that saves on washing up.
Whether you're cooking in a compact campervan galley or a rural Spanish kitchen, this recipe is a lifesaver. It’s lighter, faster, and perfectly suited for resourceful cooking when you want honest comfort food without the heavy, bloated feeling afterwards.

The "Secret" to the Sauce
Instead of a heavy béchamel or pouring in cream, we use the starchy water from the potatoes and a touch of the fish poaching liquid (or a splash of milk) to create a silken, lighter sauce. It binds the ingredients beautifully without masking the delicate taste of the seafood.
Ingredients for no-cream fish pie
(Serves 1-2)

300g Mixed Fish: A mix of cod, hake, and perhaps a few prawns.

2 Large Potatoes: Peeled and cut into small cubes.

1 Leek: Finely sliced.

100ml Milk (or a splash of vegetable stock).

1 tsp Dijon Mustard: For a bit of depth.

Fresh Parsley: A generous handful, chopped.

Lemon Juice: A squeeze to brighten the flavours.

Salt & Black Pepper: To taste.
Method

Boil the Base: Place the potato cubes in a pan of salted water. Bring to the boil and cook for about 8–10 minutes until they are just tender but not falling apart.

The All-in-One Magic: About 3 minutes before the potatoes are finished, add the sliced leeks to the same pan. Let them soften in the boiling water with the potatoes.

Combine: Drain the potatoes and leeks, but keep a tablespoon or two of the cooking water in the pan.

Flavour it Up: Stir in the milk, mustard, lemon juice, and parsley. Season well with black pepper.

Add the Fish: Gently fold in your fish chunks. The heat from the potatoes will start to cook the fish.

The Finish: Transfer the mix to a small, ovenproof dish. You can either mash the top potatoes slightly or leave them as cubes for a rustic look.

Bake: Pop it into a preheated oven at 200°C for about 15–20 minutes until the fish is flaky and the top is starting to turn golden.
