When I used to regularly visit my friends in Dublin, Anne would always bake soda bread and I don’t know why it has taken me so long to get round to baking it myself. As I didn’t have yoghurt or cows milk I decided on this simple dairy free version.
400g strong white flour
300g wholemeal flour
12g baking soda
600g oat milk
28g apple cider vinegar
Preheat the oven to 220°C (fan).
Mix all ingredients in a stand mixer except milk and vinegar.
With the stand mixer on a slow setting add vinegar then slowly add the milk until you have a ball of sticky dough (you may not need all of the milk).
On a floured surface place the dough and split in half.
With floured hands shape the dough into two ball shapes.
Deeply slash the dough and sprinkle with flour.
Place the two doughs into the oven and turn the heat down to 200°C.
Bake for 30 minutes.
I baked one on a hot pizza stone and the other in a preheated Dutch oven (taking the lid off for the last 10 minutes).
When done check that the bread sounds hollow when tapped on the base or insert a thermometer probe which should read around 95°C.
Place on a cooling rack and when cooled eat it with lashings butter and strawberry jam.
