I am not a fan of fast food outlets but I used to make an exception to KFC’s fried chicken and it always interested me what the chicken coating contained. There are no secrets now that we have the internet so I have read a lot of copycat recipes which probably comes close to the truth and of course there’s always an ingredient or two that puts you off: Monosodium glutamate (MSG) for example and that’s something I don’t wish to eat. It is a known carcinogen.

So after extensive reading and tasting this is my MSG free version:
125g flour
125g wholemeal bread crumbs
1 tsp salt
1 tsp caster sugar
1 tsp finely ground black peppercorns
½ tsp white pepper
¼ tsp paprika
¼ tsp dried oregano
¼ tsp dried sage
¼ tsp ground ginger
¼ tsp dried marjoram
⅛ tsp onion powder
⅛ tsp garlic powder
⅛ tsp cayenne pepper

Mix all of the above in a bowl. This makes enough to coat four pieces of chicken.

Tip: I always brine my chicken in water with sea salt and MSG free fish sauce for at least 2 hours. Remove, rinse and pat dry before covering in whisked egg with milk and then dredging in the coating. Brining adds flavour and keeps the meat tender and moist.
