This citrus based sauce is used in Japanese cuisine and it is also an important ingredient for my hot and sour soup.
In Japanese ponzu means vinegar punch but I don’t recommend that you drink it.
100ml fresh lime juice
2 tablespoons rice vinegar
150ml soy sauce
2 tablespoons mirin (sweet rice wine)
2 tablespoons brown sugar
1 pinch red pepper
Whisk all ingredients together and let it sit for at least one hour for the flavours to mingle and marry .
Store refrigerated in an air-tight glass jar.
