This is an easy and different way to serve chicken breasts for one or a dinner party. The coating helps keep the meat moist.
Using your home made mango chutney, or that liquidy stuff from a shop bought jar, add a sprinkling of cayenne pepper to taste. Stir and mash so that you can spread it easily over the chicken.
Add a handful of oats to a bowl together with a grind of fresh black peppercorns and a scattering of dried mixed herbs. Now coat the chicken in this.
Cover and place in the fridge until you are ready for supper. If you make more than one they freeze rather well.
Bring the chicken up to room temperature then bake in a pre-heated oven at around 200°C for 5 or 6 minutes then reduce the temperature to 180°C continuing to cook for another 20 minutes or until the juices of the thicken part of the breast runs clear.
Serve with mango chutney, salad or ribboned vegetables.
