350g strong white flour
115g wholemeal flour
50g oatmeal
1½t sea salt
1½t bicarbonate of soda
285g oat milk (you may not need it all)
1T apple cider vinegar
1T runny honey
60g butter, melted

Turn oven to 200°C and preheat a Dutch oven

Mix the milk and vinegar and set aside

In a bowl combine flours, salt and soda

Add vinegar, honey and butter, mix well

Slowly add the milk and mix thoroughly until you have a shaggy mass

Place the dough on a floured surface and shape into a ball

Slash the dough deeply and brush with milk

Sprinkle the base of the Dutch oven with semolina to stop the dough from sticking

Carefully place the dough in the Dutch oven and bake for 20 minute with the lid on

Remove the lid after 20 minutes then continue baking for another 5 – 10 minutes (in my case it only needed 5 minutes)

Allow to cool on a wire rack
