Confit Canard recipe with Sautéed Potatoes and Green Beans – A Campervan Treat
Confit de Canard, with crispy sautéed potatoes and green beans, is my idea of an indulgent Friday night meal in the campervan. Most of the cooking is done in my Ridge Monkey, making it a simple yet delicious dish.

I do parboil the potatoes and green beans first before finishing them in the duck fat. Technically, this means it’s not a true one-pan meal, but I’m not going to get pedantic about it. You could boil the veg in the Ridge Monkey if you wanted to, but I find my method easier.
What You’ll Need for this Confit Canard recipe
1 pack of vacuum-sealed Confit de Canard (available at LIDL and other supermarkets)
A few potatoes, peeled and parboiled
A handful of green beans, lightly boiled
2 cloves of garlic, crushed
A pinch of dried thyme
Method:
Heat the Ridge Monkey over a low to medium gas flame.
Add the duck leg along with all the fat from the packet. Throw in the garlic and sprinkle over the thyme. Close the lid and cook for around 20 minutes, turning halfway through.
Meanwhile, bring a pan of water to the boil. Add the potatoes and cook for 3 minutes, then add the green beans. After a further 2 minutes, drain and allow them to steam dry.
Remove the cooked duck, cover with foil, and set aside.
Turn up the heat under the Ridge Monkey. Add the potatoes and sauté until golden brown. Toss them occasionally for even colouring.
Add the green beans, stir through, and cook for another 2 minutes.
Discard the garlic, then plate up with the duck.
A large glass of Rioja pairs beautifully with this, but as I’m doing Dry January, a 0% beer will have to do!
