Shop bought pastry, onions, asparagus and goat’s cheese is just about all you need to make this fabulous lunch.

Caramelise 4 red onions in olive oil over very low heat for about 45 minutes adding chopped garlic at the end. When done set aside.

Meanwhile, layer sheets of filo pastry or puff pastry over a baking sheet. Brush with melted butter.

Spead the onions over followed by chopped asparagus and crumbled or sliced goat’s cheese adding plenty of freshly ground black pepper.

Bake in the oven for 15 minutes at 160°C (fan) or until things look brown and just a little burnt.

Slice and serve with salad and something chilled. Perfect and very comforting.
