Tomatoey Tart With Caramelised Onions

There's a point in late summer when tomatoes are cheap, plentiful, and better than they'll be the rest of the year — and this tart is exactly what to do with them. Ready-made pastry keeps it quick, caramelised onions bring the sweetness, and a layer of tomato purée and sun-dried tomato paste underneath means every bite is properly tomatoey, not just a few slices on top of plain pastry. Simple, low-effort, and worth making while the tomatoes are at their best.

Ingredients for Tomatoey Tart Recipe

(serves 2–3)

  • 1 sheet ready-made puff pastry
  • 2–3 large tomatoes, sliced
  • 1 large onion, sliced
  • 1 tbsp tomato purée
  • A few sun-dried tomatoes in oil, chopped
  • Garlic cloves, sliced (as many as you like)
  • Olive oil
  • Sea salt and black pepper
  • Grated cheese of choice, to finish

Method

  1. Preheat the oven to 200°C. Place the pastry sheet in a greased baking dish, prick with a fork, and bake for 20 minutes.
  2. Meanwhile, cook the sliced onion in a little oil over low to medium heat. Sprinkle with salt to help draw out the moisture, and cook until brown and caramelised.
  3. Mix the tomato purée and chopped sun-dried tomatoes with a little oil to form a paste, and spread over the baked pastry base.
  4. Layer the sliced tomatoes over the paste. Slot the garlic slices and caramelised onions between the tomatoes. Drizzle with olive oil and a good grind of black pepper.
  5. Bake for a further 20 minutes, until the tomatoes are soft and starting to blacken at the edges.
  6. Scatter with grated cheese and bake for another 5 minutes until melted.
  7. Serve with salad.
