February Chilli Ferment Recipes — Four New Jars from a La Caja Saludable Box

After three and a half weeks of storms rolling across the countryside, Saturday finally opened with clear skies and the first stretch of calm weather in almost a month. It felt like the perfect day to put together a few February chilli ferment recipes, especially when a new La Caja Saludable produce box arrived at the front door — a colourful mix of serranos, sweet yellows, habaneros and a handful of strays that didn’t quite fit any single category.

Before anything went into jars, the box itself deserved a moment. Here’s how it arrived, arranged like a painter’s palette.

I didn’t use the full 2 kg this time. Instead, I picked out the chillies that felt right for a set of February chilli ferment recipes, each one shaped by instinct, mood and the simple pleasure of filling jars on a bright winter afternoon.

These February chilli ferment recipes came together from instinct, mood, and whatever the produce box offered.

Here’s what went into the jars.

🔥 Fire Flame Roja — Serrano Chilli Ferment

Heat: Medium‑hot
Profile: Clean, bright, serrano‑forward heat

Built from the red and orange serranos in the box — thin‑walled, lively and perfect for a classic red ferment. Carrot for body, cumin for warmth, bay leaf for roundness. A confident, small‑batch chilli recipe that always earns its place on the shelf.


🌞 Dulce Amarillo — Yellow Pepper Ferment

Heat: Mild
Profile: Soft, golden, gently sweet

A mellow mix of yellow bell peppers with a couple of green jalapeños for lift. This one practically glows in the jar — sweet, sunny and easy going. A perfect introduction to fermenting with weights and a simple 2% brine.


🌺 Tropical Picante (Apple Edition) — Habanero Apple Ferment

Heat: Hot
Profile: Fruity, sharp, vibrant

This batch was meant to include pineapple, but the village shop had none — so I reached for an apple instead. Peeled, sliced, and tucked in with the yellow habaneros, carrot and turmeric.
The result is crisp, bright and surprisingly elegant. A happy accident that fits the Flexible Chef spirit perfectly.


🌿 Sun‑Garden Mixed Chilli Jar — Mixed Chilli Ferment

Heat: Variable
Profile: Tangy, colourful, versatile

A catch‑all ferment using the remaining chillies I selected from the box — reds, yellows, a few habaneros — plus onion, garlic, carrot and peppercorns.
It’s the kind of jar that can go anywhere: blended into a sauce, mashed into a paste, or kept alive in the fridge as a living condiment.

What I love about these February chilli ferment recipes is how each jar develops its own personality as it bubbles away.


A Small Upgrade in the Fermenting Department

This is the first batch where I finally retired the old zip‑lock‑bag‑filled‑with‑brine trick and switched to proper fermenting weights.
The difference is immediate — calmer jars, cleaner brine, and none of the daily nudging I used to do to keep stray chilli slices submerged.

A tiny upgrade, but it feels like levelling up.


And About That Blender…

These four jars reminded me again how much I love an ultra‑smooth sauce — the kind that pours like silk. Which is why I’ve been eyeing a blender upgrade and checking down the back of the sofa for spare coins.
One day I’ll get the kind of machine that can turn a chilli mash into velvet.
For now, I’ll keep coaxing the old one along.

All four jars are now tucked away, bubbling gently as the weather settles. They’ll each take their own path — some quick, some slow — and I’ll blend them when they tell me they’re ready.
