About The Flexible Chef

I'm Phil Morrison. I've been cooking and writing about food since 2012, from a village in rural Jaén province, Andalucía, and from the road in a Fiat Ducato campervan called Florie.

The Flexible Chef is built around real food, cooked properly, for one — Spanish classics, gut health recipes, campervan cooking across the Iberian Peninsula, and a long-running series of from-scratch versions of the jars and bottles that are hard to find in rural Spain.

My readers are English-speaking: expats and residents across Spain and Europe, Dutch, German, Belgian and Scandinavian travellers, and food-literate people in the UK who cook seriously and care where ingredients come from.
