Slow Cooker Beef Curry — Kerala Style with Black Beans
Kerala beef is usually dark, dry-fried, and deliberately scorched. This isn't that — but the spice logic is the same. The slow cooker keeps things saucy. The overnight marinade does everything else.

Why the slow cooker works here
A slow cooker beef curry is a different thing to a traditional Kerala dry roast. Traditional Kerala beef — the dry roast version — relies on high heat, long reduction, and a finish that gets close to burning. You can't replicate that in a slow cooker, and I didn't try. What you get instead is a deep, spiced braise: the same fennel-forward warmth, the same chilli heat, but with sauce enough to pull into rice. Different dish, same DNA.
The overnight marinade is non-negotiable. All the spices go in the night before — there's no separate tempering step, no blooming in oil — so by morning the beef is fully seasoned all the way through. The black beans went in for the last twenty minutes, just long enough to absorb a little of the braising liquid without collapsing. Two tablespoons of fig chutney stirred through at the end round out the acidity and add a low background sweetness that plays well against the chilli.
A note on the beef
I used guisar tacos — the rough-cut stewing beef sold in most Spanish supermarkets — marinated overnight and browned in the hob-safe insert of my Crock-Pot before anything else. Any braising cut works. The key is the browning: it builds the base colour and flavour that the slow cooker won't provide on its own.

Sunday's rice was left over from the night before — reheated, which means resistant starch. A happy accident for the gut.
The recipe
Slow Cooker Beef Curry — Kerala Style with Black Beans
Serves: 2 | Prep: 15 mins + overnight marinade | Cook: 3½ hours on high
Marinade (mix the night before)
- 500g beef stewing pieces (guisar tacos or similar braising cut)
- 2–3 green chillies, finely chopped
- 1–2 tsp TFC fermented garlic & ginger paste
- 1 tsp red chilli powder
- ½ tsp ground turmeric
- 1 tsp ground coriander
- ½ tsp ground black pepper
- 1 tsp TFC garam masala
- ½ tsp fennel powder (perinjeerakam)
- 1 tsp apple cider vinegar
- 1 tsp lemon juice
- Good pinch of dried curry leaves
For the pot
- Ghee, for browning and softening
- 1 Spanish onion, sliced
- 1 red onion, roughly chopped
- Splash of water, to deglaze
- 2–3 whole dried red chillies, snapped
- Small handful desiccated coconut
- ½ tin (approx. 120g drained) black beans
- 2 tbsp fig chutney
Method
- The night before: combine all the marinade ingredients with the beef, mix well, cover and refrigerate overnight.
- When ready to cook, heat ghee in the hob-safe slow cooker insert (or a heavy frying pan). Brown the marinated beef in batches over high heat until coloured on all sides. Set aside.
- Lower the heat and add more ghee. Cook the sliced Spanish onion and chopped red onion gently until soft and lightly caramelised — 10–15 minutes.
- Deglaze with a small splash of water, scraping up any stuck bits from the base.
- Stir the remaining marinade through the onions. Add the desiccated coconut. Return the beef to the insert with the snapped dried chillies.
- Transfer the insert to the slow cooker base. Cook on high for 3 hours.
- Add the drained black beans. Cook for a further 20–30 minutes.
- Taste and adjust seasoning. Stir through the fig chutney just before serving.
- Serve with turmeric basmati rice cooked with a pinch of nigella seeds, raw red onion rings, and thin cucumber julienne.
Slow Cooker Beef Curry — a few notes
- No coconut oil — ghee throughout. It works fine and adds its own richness.
- Hob-safe insert — the Crock-Pot's hob-safe insert means browning and deglazing happen in the same vessel. If yours isn't hob-safe, do those steps in a separate pan and transfer.
- Saucy not dry — this is a braise, not a traditional dry-fried Kerala roast. Don't go in expecting the scorched finish. Go in expecting something better suited to an evening at home with rice.
- Freezes well — makes two generous portions. One for tonight, one for the freezer.
