There’s lamb in the fridge so it is time to make a fresh batch of mint sauce. This really is simple and keeps for weeks stored in an air tight jar in the door of the fridge.

Strip the leaves off a bunch of fresh mint then sprinkle with sea salt and chop finely. Scoop up and place in a bowl.

Grind one tablespoon of brown sugar in a pestle and mortar and sprinkle over the mint.

Pour 4 tbs of boiling over then stir and leave to cool.

When cool add 4 tbs white wine vinegar, stir, taste and season if necessary.
