Crispy Baked Papas Rellenas – Stuffed Potato Balls

Papas rellenas are stuffed potato balls – a Latin American classic that turned up as a tapa in the village bar here in Monte Lope Álvarez, made and deep-fried by Alicia's mum. Hers were extraordinary. This baked version is my attempt to capture the same thing at home: a crisp golden shell, soft fluffy potato, and a juicy spiced mince centre. No deep fryer required — just a hot oven, a drizzle of olive oil, and a little patience with the shaping.


INGREDIENTS

For the potato dough:

  • 700–800g floury potatoes
  • 1 egg
  • 1 tablespoon olive oil
  • Salt and black pepper
  • Pinch of nutmeg (optional)

For the mince filling:

  • 200–250g minced beef, pork, or a mix — home-minced if you have a KitchenAid attachment
  • ½ small onion, very finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon tomate frito
  • ½ teaspoon sweet pimentón
  • Pinch of dried oregano
  • Salt and black pepper
  • Splash of fino or dry white wine to deglaze (optional)

For the coating:

  • 1 egg, beaten
  • Breadcrumbs — panko gives extra crispness
  • Olive oil spray or drizzle

METHOD

Cook the Potatoes

Peel and cut the potatoes into chunks. Boil in well-salted water until very soft. Drain thoroughly and leave to steam dry for a couple of minutes — excess moisture will make shaping difficult.

Mash until completely smooth. Mix in the egg, olive oil, salt, pepper, and nutmeg if using. Set aside to cool completely before shaping.

Make the Mince Filling

Sauté the onion in a little olive oil until soft. Add the garlic and cook for 30 seconds. Add the mince and brown well, breaking it up as it cooks.

Stir in the tomate frito, pimentón, oregano, salt, and pepper. If using, add a splash of fino or white wine and let it bubble off. Cook until the mixture is thick and not at all watery — moisture will break the potato shell during shaping. Cool completely.

Baked Papas Rellenas – Shape and Coat

Take a golf ball-sized amount of potato and flatten it in your palm. Add a teaspoon of mince filling to the centre. Close the potato around it and roll gently into a smooth ball. Lightly oil your hands if the mixture is sticking.

Dip each ball in beaten egg, then roll in breadcrumbs until evenly coated. Place on a lined baking tray and spray or drizzle lightly with olive oil.

Bake

Preheat the oven to 200°C (fan 180°C). Bake for 20–25 minutes, turning once, until golden and crunchy all over.

THE FLEXIBLE CHEF'S NOTES

The two most important steps here are cooling – both the potato and the filling must be completely cold before you shape, or the whole thing falls apart – and drying the mince thoroughly so there's no liquid to weaken the shell. Home-mincing the meat in a KitchenAid gives you a coarser texture that holds together better in the filling than supermarket mince.

Alicia's mum deep-fried hers, and they were, frankly, better. But this baked version is a reasonable weeknight compromise that doesn't involve a pan of hot oil.

If you enjoy this technique, it works equally well with rice — Arancini al Ragù uses the same idea with a Sicilian filling.
