Easy potato recipes are some of the most searched, most cooked, and most argued-over dishes in any cuisine. And with good reason — few ingredients are as versatile, as forgiving, or as capable of being both humble and spectacular on the same plate.

Easy Potato Recipes – A Brief History of the World's Favourite Ingredient

The potato has been feeding people for a long time. It was first cultivated in the high Andes of Peru and Bolivia over 7,000 years ago by Indigenous communities who developed hundreds of varieties suited to the altitude, the cold, and the thin mountain air. It took another few thousand years for the rest of the world to catch up.

Spanish sailors brought it to Europe in the 1570s, landing it first in the Canary Islands before it crept north to the continent. The English like to claim Sir Walter Raleigh or Sir Francis Drake — the Spanish got there first. By the time the potato reached Ireland, northern Europe, and eventually the British Isles, it had already been feeding Andean civilisations for millennia.

Here in rural Andalucía, potatoes are everywhere and reliably good. Firm, waxy, suited to frying and roasting. What you will not find, however, is a Jersey Royal. That particular pleasure — thin-skinned, nutty, sweet, faintly earthy, boiled and dressed with nothing but butter and mint — does not travel to Spanish shelves. It remains one of the few things I genuinely miss.

In the meantime, there is tortilla, there is gratin, and there is fondant potatoes in duck fat. It will have to do.

Section 1 – Fried, Hob & Boiled

Section 4 – Mashed & Puréed
