Parsnips have been a staple in European cuisine for centuries. Originating from the Mediterranean region, they were a popular food in ancient Greece and Rome. Before the introduction of the potato, parsnips were a key source of nourishment in Europe. Today, they remain a favourite during the colder months, adding a sweet and nutty flavour to dishes.

This versatile root vegetable is not only delicious but also packed with nutritional benefits. High in dietary fibre, parsnips support digestion and help maintain healthy blood sugar levels. They are also rich in vitamins C, E, and K, which boost immunity and improve bone health. Additionally, parsnips provide essential minerals like potassium and magnesium, supporting heart health and muscle function.

Looking for a comforting meal? This easy parsnip soup recipe is perfect for two people.
