Parsnip Soup Recipe – Origin, Nutrition, and Easy Recipe

Easy Parsnip Soup Recipe
Serves: 2
Prep Time: 10 minutes
Cooking Time: 30 minutesp
Ingredients:
250g parsnips, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
½ tablespoon olive oil
½ teaspoon ground cumin
500ml vegetable stock
100ml milk (or plant-based alternative)
Sea salt and white pepper, to taste
Fresh parsley, chopped, for garnish
Method:
- Sauté the Vegetables: In a pot, heat olive oil over medium heat. Cook onion and garlic until softened. Add cumin if using.
- Cook the Parsnips: Add parsnips and cook for 5 minutes, stirring occasionally.
- Add Stock and Simmer: Pour in vegetable stock, bring to a boil, then simmer for 20 minutes until tender.
- Blend and Season: Blend the soup until smooth. Stir in milk and season with salt and pepper.
- Serve: Garnish with parsley and serve hot.
