Spicy Meatball Fry-Up for One

I had been parked up in Cantabria for a long weekend, and the fridge was looking slim. No time to hit the supermercado before moving on, one hungry person, and a tin of Hacendado albóndigas de pollo — Mercadona's own-brand chicken meatballs in tomato sauce. Also in the van: a handful of new potatoes, some green beans, and a spice stash. That's enough.

This fry-up is not really a recipe. It's more of a method for making a tin of meatballs taste like something worth eating, which, with a few spices and a hot pan, they genuinely are.

Start by boiling the new potatoes for five minutes to give them a tender centre. While they cook, trim the green beans and get a pan warm over the gas with a splash of olive oil. In go the potatoes — garlic powder, smoked paprika, dried thyme, and chilli flakes over the top — and let them crisp up. Add the green beans and fry for another five minutes, stirring to coat everything in the spices.

Then open the tin. Tip the albóndigas and their tomato gravy straight into the pan, stir gently, and simmer until piping hot. A dollop of Dijon mustard or a splash of hot sauce deepens the gravy. A drizzle of balsamic vinegar over the top to finish.

One pan, minimal washing up, and considerably better than eating the meatballs cold from the tin, which was the alternative.

Spicy Meatball Fry-Up — What You Need

(serves 1)

  • 1 tin of albóndigas de pollo in tomato sauce (Hacendado or similar)
  • A handful of new potatoes
  • A handful of green beans, trimmed
  • Garlic powder, smoked paprika, dried thyme, chilli flakes
  • Olive oil
  • Dijon mustard or hot sauce (optional)
  • Balsamic vinegar to finish
