Comfort Food Favourite: Juicy Beef Meatballs in Mushroom Gravy

This is the kind of easy comfort food recipe that makes a cool evening feel a little warmer. These juicy beef and Parmesan meatballs simmer gently in a rich mushroom gravy, made even better with homemade chicken stock and a touch of Dijon mustard.

Fresh breadcrumbs, garlic, and parsley stalks bring extra flavour and tenderness to the meatballs, while Parmesan adds that irresistible savoury kick. It’s simple, hearty, and ideal for when you fancy something cosy but full of character.

Ingredients for Beef & Parmesan Meatballs

400g minced beef

1 small leek, finely chopped (white part only)

1–2 cloves garlic, roughly chopped

Small handful parsley stalks (or leaves), roughly chopped

40g fresh breadcrumbs (from stale bread, blitzed)

1 heaped tbsp grated Parmesan

1 tsp Dijon mustard

Salt and black pepper

Olive oil, for frying

For the Mushroom Gravy

1 tbsp flour

1 tbsp tomato purée

150g mushrooms, sliced

400ml homemade chicken stock

1 tsp Dijon mustard (optional, for depth)

1 tbsp grated Parmesan (to finish)

A splash of Worcestershire or soy sauce (optional)

Salt and pepper

How to Make Juicy Beef Meatballs in Mushroom Gravy

Step 1: Make the Breadcrumb Mixture

Blitz the stale bread, garlic, and parsley stalks (or leaves) together in a food processor until you have fine, fragrant breadcrumbs.

Step 2: Mix and Shape the Meatballs

In a bowl, combine the minced beef, chopped leek, Parmesan, Dijon, and the breadcrumb mix. Season generously with salt and black pepper. Roll into small, firm meatballs and chill for 15 minutes.

Step 3: Brown the Meatballs

Heat a drizzle of olive oil in a frying pan and brown the meatballs on all sides until golden. Remove and set aside — they’ll finish cooking in the gravy.

Step 4: Build the Mushroom Gravy

Using the same pan, sauté the mushrooms until soft and golden. Stir in the flour and cook for a minute before adding the tomato purée and Dijon. Gradually pour in your homemade chicken stock, stirring constantly until smooth. Add a splash of Worcestershire or soy sauce if you fancy a deeper flavour.

Step 5: Simmer the Meatballs

Return the browned meatballs to the pan. Cover and simmer gently for 15–20 minutes, until they’re cooked through and the gravy has thickened into a glossy sauce.

Step 6: Finish with Parmesan

Just before serving, stir a tablespoon of grated Parmesan into the gravy. It melts beautifully, adding richness and that signature savoury depth.

No leek? Use a small onion or shallot instead.
