When I think back to my time living in the Limousin, itβs the scent of chestnut forests that stays with me β earthy, nutty, and a little wild. That memory finds its way into this beef meatballs recipe: juicy, tender beef meatballs, finished in a rich, restaurant-style trompette de la mort mushroom gravy.
These mushrooms are seriously luxurious β around β¬300 per kilo β so we use them sparingly, just enough to give the gravy a deep, earthy perfume. Perfect for a football night dinner or any time you want gourmet meatballs at home, served with thick, fresh sourdough to soak up all that glorious sauce.

How to Make this Beef meatballs recipe
200 g beef mince
Β½ small onion, grated or very finely diced
1 clove garlic, finely minced or grated
1Β½ tbsp breadcrumbs
1Β½ tbsp milk (for soaking breadcrumbs)
1 tbsp grated Parmesan
Small bunch fresh parsley, chopped
Sea salt & black pepper
Tiny splash Worcestershire sauce
How to Make the Trompette de la Mort Gravy
2β3 chicken wings
Β½ small onion, roughly chopped
1 small carrot, roughly chopped
Β½ tbsp tomato purΓ©e
1 bay leaf, a small sprig thyme
75 ml water (or a little more to cover)
2β3 dried trompette de la mort mushrooms (soaked, chopped, and reserved soaking liquid β remember, β¬300/kg, so a few go a long way!)
Sea salt & black pepper
15β20 g butter
To Serve
1β2 thick slices fresh sourdough
Method
1. Roast the Chicken Wings
Preheat the oven to 220Β°C. Toss chicken wings, onion, and carrot with a little oil in a small tray. Roast 35β40 minutes until golden and sticky β this caramelisation gives your rich roast chicken gravy its depth.
2. Make the Trompette de la Mort Gravy
Scrape all the sticky goodness from the tray into a small pan. Add tomato purΓ©e, bay, thyme, and just enough water to cover. Simmer gently 25β30 minutes until the gravy is rich and flavourful. Strain, reserving the liquid.
3. Add Trompette de la Mort
Soak the dried mushrooms 15β20 minutes. Chop roughly and strain the soaking liquid. Add mushrooms and a splash of the liquid to the gravy. Simmer 5 minutes β the aroma will transport you straight to those Limousin chestnut forests.
4. Make Extra-Soft Meatballs
Soak breadcrumbs in milk; do not squeeze. Grate or finely process onion, carrot, and garlic. Mix gently with beef, Parmesan, parsley, salt, pepper, and Worcestershire if using β fold, donβt knead. Chill 15β20 minutes to firm up the mixture. Shape into 3β4 small meatballs.
5. Brown the Meatballs
Heat a little oil in a small pan. Brown meatballs on all sides β colour is flavour, but keep the heat moderate so they stay tender. Remove to a plate.
6. Finish in the Gravy
Pour hot mushroom gravy over the meatballs. Simmer gently 10β12 minutes, turning once. Stir in butter at the end for a glossy, silky finish. Taste and adjust seasoning.
π‘ Extra-Silky Gravy Hack: Add a tiny splash of the reserved mushroom soaking liquid along with the butter and give it a gentle whisk β this emulsifies the fat and makes the gravy cling beautifully to the meatballs.
7. Serve
Pile meatballs on fresh sourdough slices. Spoon over the trompette de la mort gravy. Kick back, football on, and enjoy every spoonful of this gourmet meatball dinner.

Make meatballs and gravy up to 6 hours ahead.
Cool slightly, cover, and refrigerate.
About 15 minutes before kickoff, reheat gently, turning meatballs once or twice.
Stir in butter just before serving for that final glossy finish.
