The craving started with fifteen seconds of someone else's video and ended, predictably, with me elbow-deep in beef mince at nine o'clock at night. Once I'd sorted my kebab shop flatbread recipe, it seemed almost rude not to fill it with something worth wrapping β and a proper sausage-style beef kebab recipe felt like the only honest answer.

This isn't skewered chunks and it isn't trying to be a doner β it's mince, hand-mixed with a straightforward spice blend, shaped into a fat log and griddled until browned. Simple enough for a one-person kitchen, but with enough going on flavour-wise that it doesn't feel like an afterthought to the bread. Two flatbreads, one kebab split between them, and you've got a proper kebab shop night in without leaving Casa Adora.
Ingredients for Sausage-Style Beef Kebabs recipe
- 200g beef mince (15β20% fat)
- Β½ small onion, finely grated and squeezed of excess liquid
- 1 garlic clove, crushed
- Β½ tsp ground cumin
- Β½ tsp ground coriander
- Β½ tsp smoked paprika
- ΒΌ tsp chilli flakes (optional)
- small handful fresh parsley, chopped
- 1 tsp olive oil
Why This Sausage Style Beef Kebab Recipe Works
The trick to a good sausage style beef kebab recipe is resisting the urge to overwork the mince β handle it like you would a burger, not a meatball, and it stays tender rather than bouncy.
Spiced Onion Garnish
Ingredients:
- 1 small onion, very finely sliced
- 1β2 tsp fermented hot sauce (your choice β Mango Ember, Verde Fresco, or Tropical Sunset would all work)
- A squeeze of lemon juice
Method:
Toss the sliced onion with the hot sauce and lemon juice, and leave for a few minutes to soften slightly and take on the colour and heat. Scatter over the kebab just before wrapping.
Method for the Sausage Style Beef Kebab
Mix the kebab meat. In a bowl, combine the beef mince, grated onion, garlic, cumin, coriander, smoked paprika and chilli flakes with a good pinch of salt and black pepper. Mix gently by hand β just enough to bring it together, not so much that the texture goes tight.
Rest in the fridge. Fold through the chopped parsley, then rest the mixture in the fridge for 15β20 minutes. This firms it up and makes it far easier to shape.
Shape the kebab. Divide the rested mixture in two and shape each into a fat sausage log, either moulded around a skewer or freehand.
Heat the pan. Heat a griddle or heavy frying pan over medium-high with a little olive oil.
Griddle the kebabs. Cook, turning every couple of minutes, for 8β10 minutes total until browned all over and cooked through.
Rest and serve. Rest for a couple of minutes, then tuck straight into a warm flatbread.
Serving Suggestion
For an Asian-leaning twist, drizzle with my Nearly Sharwood's Homemade Hoisin Sauce β the sweetness plays nicely against the smoked paprika in the mince.
If you'd rather turn up the heat, my Mango Ember Hot Sauce brings fruit and fire in equal measure, and stands up well to the richness of the beef.
Either way, keep it simple alongside β a scattering of red onion and a squeeze of lemon is all this really needs.
