Pearl Barley Risotto — A Van Kitchen Recipe with Ghee

The Área de Autocaravanas in Daimiel sits on the edge of something genuinely special. Las Tablas de Daimiel National Park — a rare floodplain wetland formed by the confluence of the Guadiana and Cigüela rivers — is ten minutes from the parking bays. Dogs aren't allowed inside the park itself, but two kilometres from town the Laguna de Navaseca offered something better for us: a stunning wetland ecosystem where Issy could walk on the lead while the aquatic birds went about their business at the water's edge. We took our time. So did the birds.

Pre-cooking the barley the day before isn't just a convenience — cooling cooked pearl barley increases its resistant starch content, meaning it feeds your gut bacteria rather than spiking your blood sugar. If you're on a longer trip, cook it the evening before at your pitch. If you're leaving from home, batch-cook and freeze it before you go — it defrosts overnight in the van fridge and is ready to use the next day. Either way, the van timing works in your favour.

Pearl Barley Risotto — A Van Kitchen Recipe with Ghee

Serves 1 | Saucepan | Prep 5 mins | Cook 20 mins | Total 25 mins
Pearl barley precooked the day before


Ingredients

  • 70g pearl barley, simmered in water the day before and cooled overnight (gives approximately 150–180g cooked weight)
  • 1 tbsp homemade ghee — or butter if you don't have it
  • 1 small onion, finely chopped
  • 1 garlic clove, sliced
  • 1 small courgette, diced
  • ½ tsp dried thyme
  • 100–150ml hot stock (vegetable or chicken)
  • 1 tbsp Parmesan, grated
  • A small handful of flat-leaf parsley, roughly chopped
  • A small squeeze of lemon
  • Sea salt and black pepper

Method

  1. Heat the ghee in a saucepan over a medium heat. Add the onion and cook until soft and sweet — 3–4 minutes. Add the garlic and cook until just golden.
  2. Add the courgette. Cook for 3–4 minutes until it softens and picks up a little colour.
  3. Add the thyme, salt and black pepper. Stir for 10–15 seconds to bloom the herbs in the fat.
  4. Add the pre-cooked pearl barley and stir to coat it in the ghee and aromatics.
  5. Pour in 100ml of hot stock. Simmer gently, stirring occasionally, adding more stock as it absorbs — as you would a traditional risotto. You want it creamy and glossy, not soupy. This takes 5–7 minutes.
  6. Remove from the heat. Stir through the Parmesan and parsley. Add a small squeeze of lemon to brighten.
  7. Taste, adjust the seasoning, and serve immediately.

Recipe Notes

  • The ghee is what makes this. Its slightly nutty, clarified flavour works better here than butter, and it travels well in a van. If you make your own — and it's worth it — here's the method.
  • Pre-cooking the barley the day before isn't just a convenience — cooling cooked pearl barley increases its resistant starch content, meaning it feeds your gut bacteria rather than spiking your blood sugar. The van timing works in your favour.
  • Add stock gradually and keep stirring. Pearl barley has its own starch and will give you the creamy texture you're after — trust the process rather than adding all the liquid at once.
  • Parmesan is non-negotiable. A small amount does a great deal.
  • This works equally well as a side dish alongside a piece of fish or chicken, if you have it.
