Sichuan Black Bean Soba Noodles Recipe

I had friends over for dinner the other night — two vegetarians and one vegan — and it pushed me into that familiar dance of "what can I cook that everyone will actually enjoy?" I ended up making a vegan Hungarian goulash, and to my surprise, it went down brilliantly. Proper clean flavours, paprika warmth, and nobody missed the meat. It got me thinking about vegan comfort food, and how much flavour you can build when you stop worrying about the label and just cook.

That's where this soba noodles recipe came from. I wanted something quick, bold, and satisfying — the sort of thing you can throw together on a Monday but still feel like you've cooked something interesting. I had fermented black beans, Sichuan peppercorns, white cabbage, tofu, and a bundle of soba noodles in the cupboard. No red pepper, but cabbage does the job. The result is a bowl of spicy Sichuan noodles with proper umami depth, a bit of citrus-numbing buzz from the Sichuan pepper, and that earthy soba base that makes the whole thing feel grounded.

It's a one-pan dinner, vegan by accident, and exactly the sort of dish that earns whatever's been sitting at the back of your store cupboard.

How to Make Soba Noodles Recipe with Sichuan Black Bean Sauce

Ingredients (serves 1)

  • 75 g soba noodles
  • 120–150 g firm tofu, cubed
  • 1 heaped handful white cabbage, finely sliced
  • 1 garlic clove, minced
  • 1 tsp fermented black beans, rinsed and mashed
  • 2 tbsp tinned black beans, drained
  • ½ tsp ground Sichuan peppercorns (or crush whole ones)
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar or white wine vinegar
  • ½ tsp sugar (balances the black beans)
  • Olive oil
  • Optional: parsley, lemon

Method

  1. Cook the soba in salted water until just tender. Drain and rinse briefly to stop them clumping.
  2. Crisp the tofu in a splash of olive oil until golden on most sides. Remove and keep aside.
  3. In the same pan, add a touch more oil and fry the garlic, mashed fermented black beans, and Sichuan pepper for 20–30 seconds until aromatic.
  4. Add the cabbage and cook until softened and lightly caramelised.
  5. Return the tofu to the pan. Add the tinned black beans, soy sauce, vinegar, and sugar. A splash of water helps it loosen into a sauce.
  6. Toss in the soba noodles and let everything coat and gloss.
  7. Taste and adjust: more soy for salt, more vinegar for brightness, more Sichuan pepper if you want that numbing lift.
  8. Finish with parsley or a squeeze of lemon.

Why This Soba Noodles Recipe Works

The fermented black beans give the depth you normally get from meat — that low, earthy umami that makes a simple bowl feel like it's been cooking for hours. The Sichuan peppercorns bring the citrus-numbing buzz rather than straightforward heat. The cabbage softens into something almost sweet. And the soba holds the whole thing together without getting heavy.

It's fast, it's vegan, and it tastes like you've made an effort even when you haven't.
