Tofu recipes don't have a strong tradition in Andalucían cooking — but they have one now. This is a small, deliberate collection built around a single ingredient that deserves more attention than it gets in most British and Spanish kitchens. Tofu is made from soy — a pulse — which puts it in good company on this page: high in protein, low in saturated fat, rich in minerals, and backed by solid research on isoflavones and heart health. Why Tofu Recipes Belong in a Mediterranean Kitchen
Tofu has been eaten in China for around 2,000 years. In the west it arrived wearing the wrong label — a meat substitute, a compromise, something you ate instead of something better. That framing has done it no favours.
The reality is different. Firm tofu is a complete protein — all essential amino acids present — with around 8g of protein per 100g, very low saturated fat, and meaningful amounts of calcium, iron, manganese and selenium. The isoflavones in soy have been studied extensively for cardiovascular and metabolic health, and the evidence is genuinely interesting. This is not a health food in the supplement sense. How to Cook Tofu Well
- Pat it dry. Even low-water tofu benefits from a firm press with kitchen paper before it goes near the pan.
- Pan-fry before saucing. Colour first, sauce second — always. Tofu dropped into liquid stays soft and bland. A hot pan with a little oil gives you the crust that makes the dish.
- Season early. Tofu absorbs flavour from the outside in. Salt, spice or marinade before cooking, not after.
- Add acid at the end. A squeeze of lemon, a splash of rice vinegar, a spoonful of miso — added late, these lift the whole dish without cooking off.
