I was wondering what to do with solomillo (pork tenderloin). Knowing I had an onion, carrot and a lot of spices I came up with this Friday night special that I served with a mash of potato, carrot and sweet potato (plus a few cloves of garlic).
Solomillo, sliced
One onion, peeled and sliced
Two carrots, peeled and sliced
Mustard powder, big pinch
Allspice, big pinch
Turmeric, big pinch
Ginger, dry – big pinch
Dried red chilli, crushed, one or two
White pepper, big shake
Soy sauce, about 1 tsp
Worcestershire sauce, about 2 tsps
Cornflour, one heaped tsp
Sesame oil, about one tsp
A bay leaf
Place all of the ingredients in a glass dish and give everything a stir and mix. Cover with film and leave in the fridge for a couple of hours.
When ready to cook heat vegetable oil in a wok or frying pan and stir fry the pork (in batches if necessary) and then the vegetables, deglazing the pan with a little white wine and the remaining marinade.
My, my, a lot of ingredients but I bet this is really easy and tasty too! I’m going to give it a go…
