This Asian Pork recipe is my favourite way to prepare a Solomillo recipe from my local butcher here in Jaén. It’s essentially a quick pork tenderloin stir fry that hits all the right notes—spicy, ginger-heavy, and properly satisfying.

I was wondering what to do with a solomillo (pork tenderloin) from the local butcher. Knowing I had an onion, a carrot, and a well-stocked spice rack, I came up with this Friday night special. It’s a dead-simple Asian pork recipe that I served with a mash of potato, carrot, and sweet potato (plus a few cloves of garlic for good measure). It’s proper, rustic fusion food at its best."

How to cook this Asian Pork recipe

Solomillo, sliced
One onion, peeled and sliced
Two carrots, peeled and sliced
Mustard powder, big pinch
Allspice, big pinch
Turmeric, big pinch
Ginger, dry – big pinch
Dried red chilli, crushed, one or two
White pepper, big shake
Soy sauce, about 1 tsp
Worcestershire sauce, about 2 tsps
Cornflour, one heaped tsp
Sesame oil, about one tsp
A bay leaf

Place all of the ingredients in a glass dish and give everything a stir and mix. Cover with film and leave in the fridge for a couple of hours.

When ready to cook, heat vegetable oil in a wok or frying pan and stir fry the pork (in batches if necessary) and then the vegetables, deglazing the pan with a little white wine and the remaining marinade.

It’s the kind of meal that works just as well in a proper kitchen as it does on a small hob in my Fiat Ducato campervan. When the sun sets over the olive groves and the greyhounds are settled, there is nothing quite like a bowl of spicy, genuine comfort food.
