I came across a paste used in Bali to make Balinese Babi Guling, which is a roast pork recipe but I used it for goat.
4 shallots, peeled
2 lemongrass stalks
3 red chillies (your choice to leave the seeds in)
3 garlic cloves, peeled
Knob fresh ginger, grated
1 tablespoon coriander seeds, crushed
1 tablespoon black peppercorns, crushed
3 kaffir lime leaves
1 teaspoon turmeric
1 teaspoon sea salt
1 tablespoon palm sugar
Juice of one lime
Oil as needed
Pound all of the ingredients in a pestle or mortar or blitz in a blender to form a paste.
To use with your choice of meat simply make some slits in the flesh and rub the paste over the meat and into the slits. Allow to marinate in the fridge for several hours.
