Boxing Day Prawn Escabeche

Yesterday wasn’t a full roast — the turkey leg was braised (the potatoes were roasted, fine) — but even so, Boxing Day always feels like it needs something lighter. Something bright. Something that doesn’t involve turning the oven back on or wrestling with leftovers. A Boxing Prawn Escabeche is the answer.
This Andalusian prawn escabeche is exactly that: citrusy, aromatic, make‑ahead, and quietly elegant. It’s the kind of dish that looks like effort but behaves like a day off. Perfect for 1–2 people, whether you’re solo at Casa Adora or feeding a festive straggler who stayed for the cava.
What You’ll Need for the Boxing Day Prawn Escabeche
- 10 poached prawns, peeled and chilled
- 3 tbsp good olive oil
- 1 tbsp white wine vinegar (or sherry vinegar for depth)
- 1 small garlic clove, thinly sliced
- ¼ small onion, very thinly sliced
- 1 strip of lemon peel
- 1 bay leaf
- 3–4 black peppercorns
- Pinch of smoked paprika
- Pinch of sea salt
- Optional: fennel fronds or parsley leaves
How to Make It
- Warm the escabeche oil
Gently heat the olive oil in a small pan. Add garlic, onion, bay, lemon peel, peppercorns, and smoked paprika. Let everything soften slowly — no browning, just coaxing. - Add the vinegar
Take the pan off the heat. Stir in the vinegar and a pinch of sea salt. It should smell warm and rounded, not sharp. - Marinate the prawns
Place your cold prawns in a small bowl or jar. Pour the warm escabeche over them.
Let them sit for 20–30 minutes at room temperature, or chill for a few hours.
If chilled, bring them back to cool room temperature before serving so the oil stays glossy. - Plate with restraint
Spoon the prawns and a little of the infused oil into small glasses or your wide‑rimmed bowl.
Add a sliver of onion, a fleck of lemon peel, and a tiny herb leaf.
Minimalism is the whole point. - Use a large white plate for your Boxing Day prawn escabeche; it will impress.
