Ingredients

For the ribs:

1 rack pork ribs (approx. 500–600g)

Marinade:

1 tbsp smoked paprika

1 tsp garlic powder

½ tsp onion powder

¼ tsp brown sugar or, in my case runny honey

¼ tsp chilli powder

Sea salt & black pepper

1 tbsp olive oil

1 tbsp apple cider vinegar

  1. Prep the Ribs:
    Remove the membrane, pat the ribs dry, and set aside.

  3. Marinate:
    Coat the ribs thoroughly and leave covered for at least 2 hours or overnight if possible.
  4. Cook on Gas Hob:
    Place the ribs in your frying pan with a splash of water (2–3 tbsp). Cover with a lid and cook gently over low–medium heat for 25–30 minutes, turning halfway. Remove the lid for the last few minutes to allow the ribs to colour and slightly caramelise.
  5. Rest & Make the Sauce:
    Remove the ribs and let them rest. Meanwhile, use the same pan and meat juices to prepare the sauce below.
