This chicken albondigas recipe, containing carrot, apple & chickpea tomato broth, is my take on José Pizarro’s famous parsnip, apple, and chickpea albóndigas in saffron-tomato broth. Normally I’d use parsnips, but outside Christmas they’re elusive — the nearest Moroccan store is 50km away. Carrots make a perfect substitute: sweet, earthy, and always on hand.
The result? Tender chicken meatballs with mashed chickpeas, a touch of apple for natural sweetness, and a silky tomato broth that feels far more indulgent than its prep time suggests. It’s a one-person recipe, ideal for a busy weekday or a cosy solo dinner.

Ingredients for Chicken Albondingas
Meatballs
- 2 chicken tenders, roughly chopped
- 100g cooked chickpeas, mashed
- 1 medium carrot, peeled and chopped
- 1 small apple, peeled, cored, and chopped
- 1 small onion or shallot, roughly chopped
- 1 clove garlic
- 1 small egg
- 2 tbsp maize sourdough breadcrumbs
- 1 tsp dried herbs (thyme, parsley, or mixed)
- Salt and pepper to taste
Silky Tomato Broth
- 150ml chicken stock or water
- 2–3 medium fresh tomatoes, peeled and chopped
- 1 tsp olive oil
- ½ tsp paprika or smoked paprika (optional)
- Salt and pepper to taste
- Fresh herbs to garnish (optional)
Method
- Mince the Meatball Ingredients
Fit your KitchenAid with the mincer attachment. Run the chicken, chickpeas, carrot, apple, and onion through for a smooth, cohesive mixture. Mince the garlic separately or very finely. - Prepare the Meatball Mixture
In a bowl, combine the minced mixture with egg, breadcrumbs, herbs, salt, and pepper. Mix thoroughly. Add extra breadcrumbs if the mixture feels too wet. - Shape the Meatballs
Form 6–8 small bite-sized albóndigas — perfect for one hungry person. - Make the Tomato Broth
Heat olive oil in a small pan over medium heat. Add chopped tomatoes, chicken stock, paprika (if using), salt, and pepper. Simmer gently for 5–7 minutes until the tomatoes soften. - Sieve for Silky Texture
Remove from heat and pass the tomato mixture through a fine sieve into another pan or bowl. Press gently to extract the liquid and discard skins/seeds. - Cook the Meatballs
Return the smooth tomato broth to the pan and bring to a gentle simmer. Add the meatballs carefully and cook for 10–12 minutes, turning occasionally, until fully cooked. - Serve
Spoon the albóndigas into a bowl with the silky tomato broth. Garnish with fresh herbs if desired. Serve alone or with a slice of sourdough for a complete, comforting meal.
Tips & Variations
Note: My two chicken tenders turned out to be breast, so I doubled the ingredients and made 10 meatballs. I cooked them for 20 minutes and froze half for another day.
Carrot Substitute:
If you ever get your hands on parsnips, they work beautifully in place of carrots.
Silky Broth:
Sieving creates a restaurant-quality, smooth tomato base. A knob of butter or drizzle of olive oil at the end adds richness.
Flavour Boost:
Add a pinch of saffron, smoked paprika, or cumin to echo the original Pizarro inspiration.
Make Ahead:
Meatballs can be prepped in advance and cooked in the broth when needed.
