I knew I’d find a use for my frozen pineapples cubes. I came up with my Andaluz version of Matador which is usually tequila-based but having bad memories of that evil stuff I went with vodka.

Fill a cocktail shaker with:

A good slug of vodka
2 pineapple ice cubes
Squeeze lime juice
Dash Angostura bitters

Give it a really shake then pour into champagne flutes, top up with chilled Cava.
