Cottage Pie with Cauliflower and Cheese Mash

January in Andalucía is not supposed to be cold. Nobody tells you that when you move here. The sky is often blue enough to make your friends back in Britain quietly furious, but by six o'clock the temperature drops fast and by eight you want something in the oven and a glass of something red on the table. This cottage pie with cauliflower mash was exactly that kind of night.

This cottage pie was exactly that. I had beef mince in the fridge, half a cauliflower that needed using, and no particular desire to do anything clever. What I did do was mix the cauliflower into the mash topping along with a good handful of mature cheddar, and the result was considerably better than a straight potato mash would have been — lighter, slightly nuttier, and with that golden, slightly scorched top that makes you want to eat straight from the dish.

The meat layer is honest and unfussy: beef mince, onion, carrot, celery, a splash of Worcestershire sauce, a dollop of tomato purée, dried thyme, and a proper beef stock. That's it. If the gravy needs tightening, a cornflour slurry does the job cleanly.

One tip worth knowing: cool the mash before you spoon it over the hot meat. If both layers are hot, the mash sinks and you lose the separation. Cool topping on hot filling holds its shape in the oven and gives you that proper pie look.

Cottage Pie with Cauliflower Mash — Ingredients

serves 2)

For the meat layer:

  • 400g beef mince
  • 1 medium onion, finely chopped
  • 2 medium carrots, finely diced
  • 2 sticks celery, finely diced
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 300ml beef stock (homemade or a good cube)
  • 1 tsp cornflour mixed with 1 tbsp cold water (optional, to thicken)
  • Olive oil, salt and pepper

For the cauliflower and cheese mash:

  • 400g floury potatoes, peeled and cut into chunks
  • 200g cauliflower florets
  • 2 garlic cloves, peeled
  • 80g mature cheddar, grated
  • Salt and pepper

Method

  1. Boil the potatoes, cauliflower florets and garlic cloves together in salted water until completely soft — about 20 minutes. Drain thoroughly, then push through a ricer. Stir in the grated cheddar and season well. Set aside to cool.
  2. Warm a splash of olive oil in a frying pan over medium heat. Add the onion, carrot, celery and a pinch of salt. Reduce the heat and cook gently until softened — around 10 minutes.
  3. Add the beef mince and cook, breaking it up, until browned all over.
  4. Stir in the tomato purée, Worcestershire sauce and thyme. Cook for a minute, then pour in the stock. Simmer for 10–15 minutes until the gravy has reduced. If it needs thickening, stir in the cornflour slurry and simmer for another 2 minutes.
  5. Transfer the meat to a casserole dish. Spoon the cooled mash over the top and spread it out to the edges.
  6. Bake at 200°C for 40 minutes. Check — if the top hasn't caught and browned, give it another 5–10 minutes. Serve straight from the dish.
