Creamy White Bean, Parmesan & Spicy Sausage Soup

The weather clearly didn't read the forecast. What was meant to be weekend rain has arrived midweek instead, dragging a gloomy sky and that unmistakable chill that creeps into a campervan just as the light starts to fade. On nights like this, a bowl of creamy white bean sausage soup is exactly what's needed — warming, hearty, and simple enough to pull together on a two-ring hob. It's the same kind of comfort you'll find in my Magic Mushroom Soup, perfect for gloomy weather. But tonight called for something even heartier.

Add to that a slow puncture that needs sorting (not tonight), and it’s fair to say the mood called for comfort rather than culinary ambition.

Fortunately, comfort is something a small saucepan, a spicy pork sausage, and a tin of beans can deliver in under 20 minutes.

Tonight’s plan is simple:
Head towards Noalejo, settle into a very friendly campervan and motorhome site, plug into EHU, enjoy a hot shower, and settle in for football night with the TV, router and IPTV box humming away happily. I’ve even got the small electric fan heater on standby to keep me — and the dogs — properly toasty.

All that remains is supper. And this one earns its place.

Creamy White Bean, Parmesan & Spicy Sausage Soup


Hearty main meal for one | One pan | Campervan‑friendly

This is no delicate starter. This is thick, creamy, sausage‑studded comfort food — best eaten with a spoon in one hand and a chunk of sourdough in the other.

Ingredients

  • 1 tbsp olive oil
  • 1 spicy pork sausage
  • ½ small onion, finely chopped
  • 1 small garlic clove, finely chopped
  • 200 g cooked white beans (cannellini or butter beans), drained
  • 300 ml water or light stock
  • 30 g Parmesan cheese, finely grated
  • Freshly ground black pepper

Optional (if you have them):

  • Pinch of dried rosemary or thyme
  • Chilli flakes (only if you want extra heat)

Method for creamy white bean sausage soup

Brown the sausage
Heat the olive oil in a small saucepan over medium heat.
Split the sausage skin and crumble the meat straight into the pan. Cook for 3–4 minutes, breaking it up, until lightly browned and the fat has rendered.

Soften the onion
Add the chopped onion to the pan and cook for about 3 minutes until soft and lightly golden.

Add garlic
Stir in the garlic (and herbs if using) and cook for 30 seconds until fragrant.

Beans and liquid
Add the beans and water or stock. Bring to a gentle simmer and cook for 5 minutes.

Make it creamy — campervan style
Take the pan off the heat and mash about half the beans with a fork directly in the saucepan. This thickens everything beautifully without needing a blender.

Finish with Parmesan
Return the pan to low heat and stir in the Parmesan until melted and creamy.
Season generously with black pepper. Taste before adding salt — the sausage and cheese usually do the job.

To serve

Ladle into a bowl — or eat straight from the pan if the evening demands it.
Serve with sourdough bread, perfect for soaking up every last creamy spoonful.

Campervan verdict

This creamy white bean sausage soup is exactly the sort of meal you want when:

  • The rain’s tapping on the roof
  • Something mechanical can wait until tomorrow
  • You’re warm, plugged in, and going nowhere

Minimal washing up, deeply satisfying, and robust enough to count as a proper main meal. The dogs are fed, the heater’s on, the football’s about to kick off — and for tonight, that’s more than enough.

Sometimes flexibility means changing plans. Sometimes it just means changing what’s for supper.

And this was a very good change indeed.

Note: The jar of white beans I pulled out of the cupboard was in fact chickpeas. So this creamy white bean sausage soup was typical flexible campervan cooking.
