Crispy Skin Chicken Breast Andalusian Olive Oil Recipe

Cooking for one is my favourite kind of rebellion. No compromises, no “will they like coriander”, just me, my frying pan, and a splash of peppery extra virgin olive oil pressed down the road at the village mill. Tonight’s plan? A crispy skin chicken breast — boneless, skin-on, crisped until the skin shatters, roasted low and slow so the meat stays juicy — with roasted peppers and sautéed potatoes on the side. It’s rustic Mediterranean comfort food, but with a Flexible Chef twist: start cold, keep the oven gentle, and let fresh parsley and coriander do the finishing flourish.

Crispy Skin Chicken Breast recipe (Serves 1)

Ingredients

  • 1 boneless, skin-on free range chicken breast (see my stuffed chicken breast recipe for another twist)
  • 1 tbsp village-mill extra virgin olive oil
  • ½ tsp sea salt
  • Freshly ground black pepper
  • ½ tsp smoked paprika
  • Pinch of dried thyme or herbs de Provence
  • Fresh parsley and coriander, chopped, for garnish
  • Optional: splash of dry white wine or chicken stock for pan sauce

Method

  1. Prep: Pat the chicken dry. Season with salt, pepper, paprika, and dried herbs. Rest at room temperature for 15 minutes.
  2. Cold Pan Trick for Crispy Skin: Place the chicken skin-side down in a cold frying pan with olive oil. Allow the heat to rise slowly so the fat renders and the skin crisps without burning.
  3. Sear & Oven: Once golden (about 7 minutes), turn the breast over. Transfer the pan to a low oven (160–170°C / 325°F). Roast for 10–12 minutes until the thickest part reaches 74°C (165°F).
  4. Rest: Cover loosely with foil and allow to rest for 5 minutes.
  5. Optional Sauce: Deglaze the pan with wine or stock, scrape up the crispy bits, and swirl in butter.

Serving with Roasted Peppers and Potatoes
Serve the chicken with roasted peppers and sautéed potatoes. Scatter fresh parsley and coriander over the top. Finish with a drizzle of that peppery Andalusian olive oil.
