Easy Campervan Chicken and Potato Hash (One-Pan Recipe)

When you’re cooking on the road, simplicity is key — but that doesn't mean you have to sacrifice flavour. This Campervan Chicken and Potato Hash is the perfect example of how a few simple ingredients can come together to create a satisfying meal. If you're after an easy one-pan dinner that uses store cupboard staples and fresh vegetables, this campervan chicken recipe is for you.

One of the biggest challenges of van life cooking is minimising the washing up. That’s why this chicken potato hash is cooked entirely in one pan. It’s hearty, quick, and flexible depending on what you have in your fridge.

Ingredients:

1 skinless chicken breast, diced small

1 medium potato, diced small

1 carrot, diced

1 stick celery, diced

A few asparagus spears, chopped

1 tablespoon olive oil

½ teaspoon smoked paprika*

½ teaspoon Herbes de Provence

Sea salt and pepper to taste

Pinch of red chilli flakes

*Paprika (pimentón in Spanish) is produced in the La Vera region of Extremadura (where I currently am). There's an artisan brand, Los Villares, which I can thoroughly recommend.

If you have the time and the inclination, marinate your chicken pieces with olive oil, paprika, herbs, salt and pepper for 30 minutes before cooking.

Method:

  1. Heat the olive oil in a frying pan over medium heat.
  2. Add the diced potato and cook for around 5 minutes until starting to soften and colour.
  3. Stir in the diced carrot and celery and cook for another 3–4 minutes.
  4. Push the vegetables to the side of the pan and add the chicken pieces. Season with salt, pepper, paprika, and herbs.
  5. Cook the chicken, stirring occasionally, until browned and cooked through (about 6–7 minutes).
  6. Toss the asparagus into the pan during the last 3–4 minutes of cooking.
  7. Stir everything together and cook for a final minute to blend the flavours.

The result? A delicious, golden chicken potato hash packed with flavour, ready in around 20 minutes, and only one pan to wash up afterwards!

You could even spoon this into a wrap for a portable version if you're heading out exploring. This campervan chicken recipe proves that with a bit of creativity, an easy one-pan dinner can still feel like a feast on wheels.
