My latest adventure with fermented chillies began today when a second box of Spanish produce arrived from La Caja Saludable. Inside was a glorious 2kg Picante mix — everything from mild Padrons to fiery Habaneros, with plenty of heat levels in between. If you’ve ever wondered how to ferment chillies, this kind of mixed box is a dream: different flavours, different textures, and endless possibilities for chilli fermentation.
Knowing this delivery was coming, I prepared properly. I stocked up on 250ml and 750ml fermentation jars, ideal for small‑batch experiments and larger chilli mash projects. I even treated myself to a pocket‑sized digital scale — surprisingly handy for accurately weighing salt for brine ratios, especially when fermenting chillies for hot sauce.
What I didn’t use from the first box in cooking went straight into jars. Several batches of fermented chillies are now quietly transforming on the shelf. Apart from the jar I used to make SUNSTRIKE HABANERO: My First Fermented Hot Sauce, the rest have been bubbling away for over three and a half weeks. The colours deepen, the flavours grow more complex, and the microbes do the slow, patient work that no quick recipe can replicate. These batches of fermented chillies are developing deeper flavour every day.

You don’t need fancy equipment — just jars, salt, and time.
