French Garlic Soup with a Spanish Twist in Andalucía

Yesterday the thermometer in my little corner of Andalucía hit 36°C. Far too hot for September, yet here I am nursing a heavy case of so-called man flu. A chesty cough, runny nose, headache, fatigue — the works. While most would reach for medicine, I turned to the kitchen. Nothing soothes quite like a steaming bowl of French garlic soup.

Why garlic? Not only is it easy to digest when cooked gently, but paired with a good hit of fresh parsley it delivers a natural boost of vitamin C. Exactly the tonic I needed.

French Garlic Soup vs Spanish Garlic Soup

In France, Soupe à l’Ail is smooth and mellow, often enriched with egg or cheese. In Spain, we find its rustic cousin, Spanish garlic soup or Sopa de Ajo. This Iberian classic is hearty and smoky, with paprika and stale bread forming its backbone. Normally I would have gone down that route, but my bread supplies were already claimed for a batch of Salmorejo.

So today’s choice was clear: a creamy, restorative garlic soup recipe inspired by the French countryside, yet cooked in the heat of Andalucía.

Ingredients for French Garlic Soup

Serves 4

2 tbsp extra virgin olive oil

10 garlic cloves, thinly sliced

1 medium onion, finely chopped

1 large potato, peeled and diced

1 litre vegetable stock

1 tsp dried thyme

Pinch celery seeds

Freshly ground black pepper

60 g Gruyère or Comté cheese, grated (I used Parmesan)

A handful of fresh parsley, chopped

Note on cheese: Living in rural Andalucía means there’s no quick dash to the supermarket. With no Gruyère or Comté on hand, Parmesan did the job beautifully.

How to Make This Garlic Soup Recipe

  1. Sauté the aromatics
    Heat olive oil in a large saucepan over medium heat. Add sliced garlic and onion. Cook gently for 5–7 minutes until softened but not browned.
  2. Cook the potato
    Stir in the diced potato with thyme and celery seeds. Cook for 2 minutes so the flavours coat the potato.
  3. Add the stock
    Pour in vegetable stock, bring to the boil, then reduce to a simmer. Cover and cook for 20 minutes until the potato is tender.
  4. Blend the soup
    Remove from the heat and purée with a hand blender until smooth. Season to taste. Stir through Parmesan (or Gruyère/Comté if you have it) and chopped parsley.
  5. Prepare the croutons
    Recently I made Confit de Canard, and had a little duck fat left over. Perfect for frying cubes of sourdough into golden, garlicky croutons.
  6. Serve
    Ladle the soup into bowls, top with croutons, and drizzle with a touch of olive oil.

For a deeper garlic punch, roast the cloves in the oven until caramelised before adding them to the pot. This will transform your French garlic soup into something even richer and more rustic.

Even in the Andalusian heat, this simple garlic soup recipe was comforting, restorative, and full of character — the best way to fight off lingering man flu.
