It maybe in the 40°C’s in rural Andalucía but that doesn’t stop me seeking heat in my cooking. In fact eating spicy foods actually helps you cool down!
This is a delicious mix made with lentils and fiery dry red chillies, often called Gun Powder. Use dry as you would garam masala or add oil or ghee and you have a wonderful accompaniment, add a spoonful of mango chutney for sweetness.
1 tablespoon Urad dal, lightly toasted
1 tablespoon Chana dal, lightly toasted
1 teaspoon Coriander seeds, lightly toasted
2 – 3 black peppercorns, lightly toasted
Dry red Kashmiri or Cayenne chillies, 3 or 4 – your choice
1 teaspoon Sesame seeds, lightly toasted
Pinch Asafoetida powder
Pinch sea salt
