Some recipes have a proper origin story. This one has a wet Sunday in the late 1980s, a hamlet in Rochdale, and a sauce I've been making ever since – a homemade mustard and Worcestershire sauce with considerably more character than it has any right to.

Wolstenholme Fold is a cluster of stone buildings on the edge of the West Pennine Moors — the kind of place that earns its reputation for grey skies and horizontal rain. I was living there in the late 1980s, and on one particular Sunday, faced with food that needed considerable improvement, I improvised a sauce from what was to hand. Onion, butter, flour, mustard powder, Worcestershire sauce, a splash of water. It came together in ten minutes and transformed everything it touched.

I have been making it ever since.

The Wolstenholme Fold sauce is not a gravy in the traditional sense — it's sharper than that, with more character and considerably more attitude. The mustard powder goes in dry, bloomed in the buttery onions before the liquid arrives. The Worcestershire sauce darkens and reduces in the pan before the water goes in, which is where the depth comes from. The result is a light, punchy sauce with a mustard heat that cuts through rich meat beautifully.

This homemade mustard Worcestershire sauce is deliberately simple — the kind of thing that becomes a permanent fixture once you've made it once.

It needs homemade mustard powder – or Colman's if you have it. And it needs Worcestershire sauce — ideally homemade, but Lea & Perrins will do the job. Both are available from the Nearly Series if you want to make the whole thing from scratch.

Serves 2

Ingredients

  • 1 medium onion, chopped small but not fine
  • 1 tbsp butter or beef dripping
  • 1 tsp plain flour
  • 1 tsp mustard powder
  • 2 tbsp Worcestershire sauce
  • 120–150ml water or light stock
  • Pinch of sugar (optional but very typical)
  • Salt to taste

How to Make Homemade Mustard Worcestershire Sauce

  1. Soften the onion — Melt the butter or dripping in a small saucepan over medium heat. Add the onion and cook until translucent with a little colour — about 8–10 minutes. Don't rush this.
  2. Add the flour — Stir the flour into the onions and cook for 1 minute, just enough to coat and lose the raw taste. This is what gives the sauce its body.
  3. Add the mustard powder — Stir in the mustard powder and cook for 20–30 seconds to wake it up.
  4. Add the Worcestershire sauce — Pour it in and let it bubble and reduce slightly. It will darken and smell remarkable.
  5. Add the water or stock — Pour in gradually, stirring, until the sauce reaches a light gravy consistency. Simmer for 2–3 minutes.
  6. Taste and adjust — More Worcestershire for depth, a pinch of sugar for roundness, and salt if needed.

The Flexible Chef Tip: The flour goes in before the liquid — this is what separates a proper sauce from a thin, watery one. And don't skip the reduction step after the Worcestershire sauce goes in. That minute of bubbling is where the flavour lives.

Serve this homemade mustard Worcestershire sauce alongside pork chops, sausages, cold meat, or anything that needs a sharp, mustardy lift.
