Hot & Spicy Rice Paper Dumplings for Andalucian Dim Sum Cravings

Asian restaurants are few and far between here in rural Andalucia, and when I suddenly get a craving for dim sum, you have to get creative. That’s how these rice paper dumplings came about. They’re not traditional dim sum, and yes, they’re fried rather than steamed, but they are absolutely heavenly with a proper hot punch.

A few months ago I spotted a pack of round rice papers in the international section of a big supermarket. Into the trolley they went because I knew they’d come in handy one day. Today was that day — and these spicy chicken dumplings hit the spot beautifully.

Why Rice Paper Dumplings?

Rice paper is a brilliant pantry staple. It softens in seconds, wraps neatly, and crisps up beautifully in a pan. When you can’t find dumpling wrappers locally, fried rice paper is the perfect workaround — fast, flexible, and incredibly satisfying.

How to Fry Your Rice Paper Dumplings
(With my hot and spicy twist)

1. Make the Filling

Heat a little oil in a pan and soften:

Finely chopped onion

Finely sliced leek

Diced or grated carrot

Thinly sliced green beans

Cook for 4–5 minutes, then add:

Shredded cooked chicken

Soy sauce (1–2 tsp)

Pinch of garlic & ginger

Salt & pepper

Optional: tiny drizzle of sesame oil

Mix well and let the filling cool slightly.

2. Prepare the Rice Paper

Dip a sheet of rice paper into warm water for 3–4 seconds only — it’ll soften quickly on the board.

Lay flat and, if your filling is juicy or you want extra durability, use two sheets per dumpling.

3. Fill & Fold

Place a spoonful of filling in the centre and fold into a neat parcel:

  1. Bottom up
  2. Top down
  3. Sides in

Press gently so it seals.

4. Fry Them (The Best Method)

  1. Heat a frying pan on medium — not high.
  2. Add a thin layer of oil.
  3. Place dumplings seam-side down.
  4. Fry 3–4 minutes until golden and crispy.
  5. Flip and cook another 2–3 minutes.
  6. Drain on kitchen paper.

Tip: Rice paper burns if the heat is too high — keep things gentle.

5. Hot & Spicy Dipping Sauce

Mix:

1 tbsp soy sauce

1 tsp lemon juice or vinegar

¼–½ tsp chilli flakes

Pinch of sugar

Optional: drop of fermented hot sauce

Perfect for dipping your fried rice paper dumplings.

My Hot & Spicy Version

For extra fire in your spicy chicken dumplings, add:

1 tsp chilli flakes

½ tsp garlic powder

½ tsp ginger powder

1–2 tsp soy sauce

A squeeze of lemon

Pinch of salt & pepper

Optional: tiny pinch of sugar to balance the heat

Wrapped, fried, and dipped… they’re everything I want when dim sum cravings hit out here in the olive groves.

Crispy, spicy, quick, and made from cupboard staples — these rice paper dumplings will absolutely be making a regular appearance in my rural Andalucian kitchen.
