Crispy Garlic Lemon Pepper Chicken Wings with Sautéed Mediterranean Veg on One Gas Ring

Crispy garlic lemon pepper chicken wings cooked on a single gas ring are a regular feature of van life cooking – this is campervan cooking at its most satisfying. One pan, minimal washing up, and a meal that tastes like considerably more effort than it actually is. The wings are seasoned with smoked paprika, lemon zest, garlic, and oregano, pan-fried until golden, then covered briefly to cook through before a final blast of heat to crisp everything up. The Mediterranean vegetables go into the same pan straight after — red onion, courgette, pepper, and cherry tomatoes, soft and fragrant in under ten minutes. Ready in thirty minutes and entirely achievable on one ring.

INGREDIENTS

For the chicken wings:

  • 6–8 chicken wings
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Zest of 1 lemon
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon chilli flakes (optional)

For the Mediterranean vegetables:

  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 1 courgette, sliced
  • 6–8 cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt or celery salt
  • ½ teaspoon black pepper

METHOD

Cook the Wings

To get crispy garlic lemon pepper chicken wings right, start by patting the wings dry with kitchen paper — this is the key step for a crisp finish in a pan.

Toss the wings in a bowl with the olive oil, garlic powder, onion powder, smoked paprika, lemon zest, black pepper, salt, oregano, and chilli flakes if using.

Heat a little olive oil in a large frying pan over a medium heat. Add the wings in a single layer and cook for 10–12 minutes, turning occasionally, until golden brown on all sides.

Reduce the heat to low, cover the pan with a lid or foil, and cook for a further 5–7 minutes to ensure the wings are cooked through.

Remove the lid, turn the heat back up slightly, and cook uncovered for another 3–4 minutes, turning to crisp up all sides. Set the wings aside.

Cook the Vegetables

Using the same pan — no washing up — add a little more olive oil over a medium heat. Sauté the red onion and red pepper for 3–4 minutes.

Add the courgette and cook for another 3 minutes. Stir in the cherry tomatoes, oregano, salt, and pepper, and cook for a further 2 minutes until everything is softened and fragrant.

Serve

Plate the wings alongside the sautéed vegetables. A squeeze of fresh lemon over the wings just before eating lifts the whole dish. A quick yoghurt and garlic dip — Greek yoghurt, a little crushed garlic, a squeeze of lemon — pairs well if you have the ingredients to hand.

One gas ring, one pan, thirty minutes — this works just as well at home as it does in the van. The cover-and-steam step in the middle is important; it ensures the wings cook through without burning the outside before the inside is done. Swap the courgette for aubergine or mushrooms depending on what's available. Fresh basil or parsley stirred through the vegetables at the end adds a little brightness if you have it.
