Pan Fried Guinea Fowl with Chestnut Mushrooms

A guinea fowl recipe for when the bird deserves better than the oven. Two breasts, a pan, chestnut mushrooms, a splash of white wine and chicken stock — the kind of dinner that looks considerably more considered than the forty minutes it actually takes. The French call it Pintade Poêlée aux Champignons and make it sound complicated. It isn't.

Pan Fried Guinea Fowl with Chestnut Mushrooms — Ingredients

Serves 2

  • 2 guinea fowl breasts
  • 200g chestnut mushrooms, sliced
  • 1 shallot, finely chopped
  • 2 cloves garlic, crushed and finely chopped
  • 120ml dry white wine
  • 120ml chicken stock
  • 2 tbsp olive oil
  • 2 tbsp butter
  • A few fresh thyme sprigs
  • Sea salt and black pepper

Method

Sear: Season the guinea fowl breasts with salt and pepper. Heat the olive oil in a large frying pan over medium-high heat. Place the breasts skin-side down and sear for 3–4 minutes until golden. Flip and sear the other side for another 3–4 minutes. Remove and set aside.

Soften: Add the butter to the same pan. Once melted, add the shallot and garlic and cook for 2 minutes until softened and fragrant. Add the chestnut mushrooms and cook for 5–7 minutes until they release their juices and begin to brown.

Deglaze: Pour in the white wine and let it reduce by half. Add the chicken stock and thyme sprigs, then nestle the guinea fowl breasts back into the pan.

Simmer: Reduce the heat to medium-low, cover, and simmer for 15–20 minutes until the guinea fowl is cooked through and tender.

Finish: Remove the thyme sprigs. Taste the sauce and adjust seasoning. Serve hot with the mushroom sauce spooned generously over the top.


Good alongside buttered new potatoes or a simple green salad — nothing that fights the sauce for attention.
